A sampling of new and traditional Italian desserts and spirits specially paired to create an exceptional after dinner experience.

To introduce New Yorkers to the wonderful world of authentic Italian sweets and dessert wines the Italian Trade Commission and Dolce Italia will be conducting free tastings of desserts and dessert wines at 16 locations in NYC from December 3rd through the 13th.
Restaurants’ guests will be treated to Panettone and Pandoro, two cakes so integral to Italy’s national identity that their recipe is protected by law.
They’ll also savor a wide range of fine Italian chocolates, many from Italy’s Piedmont region, which for centuries has been a world leader in the art of fine chocolate making. And finally, they’ll be amazed by a trio of exceptional Sicilian cookies never before tasted in the States.
These fine sweets are presented in special pairings with Piedmont’s famed sparkling wine, Asti, as well as various samples of Italy’s cutting edge grappas and digestivi. All the pairings have been specially orchestrated by Italy’s leading experts using the most advanced sensorial analysis techniques and their insightful tasting notes are sure to delight and surprise even the most sophisticated gourmet.
The aim of sensorial analysis is to measure perceived taste, while clearly differentiating between objective and affective sensations in consideration of the great synesthetic conditioning of the comprehensive perception process. The sensorial analysis test requires for the cake to be tasted first, subsequently the beverage, and then scoring the perceived sensation. This procedure gives rise to two sensorial profiles (visual, olfactory, tactile and retro-olfactory sensations): the first only on the dessert and the second on the overall sensations perceived from the dessert-beverage combination, exactly as it occurs in the experience of the consumer.
